I am totally about fast and convenient. Like most women, I work a full time job outside of the home. The last thing I like to do is come home and try to figure out what I am going to fix for dinner. That takes thinking. I don't want to think. I finally decided I was going to get organized and make meals ahead and freeze them. Can I just take a moment to tell you how EASY my life has been since I did that?? Just trust me, it has. I not only did dinner, but breakfast items for my son. This post doesn't have pictures because, well, I forgot to take them but here is what I made.

This all did require time and planning on my part but I would gladly give up just a few hours on my Sunday for time the rest of the week. This also saved money for me because I wasn't having to throw away food that I hadn't used yet.
