Have you ever cooked a roast and had so much meat left over you hate to waste it? This happened to me the other day. Leftover Makeover to the rescue. I took the roast and shredded it. I cut the potatoes up that were in the roast and cubed them. Next, I took some bell pepper and onion and cooked them just enough to be tender. Add the shredded meat and potatoes heat it all up together and let the flavors soak in to each other. Add seasoning of your choice. Next, take corn tortillas, cheese and homemade hot sauce add the meat mixture and you now have roast tacos. Simple, inexpensive and fast dinner.
