TEXAS SHEET CAKE

If you have never had Texas Sheet Cake you have NO idea what you are missing! I am not sure if that is the "official" name for it, but that's what we Texans call it. In one of my other posts I mentioned my friend Linda Lange and how I LOVE her cooking. This is her recipe that she graciously shared with me. I also like her icing better than the normal icing because it is more of a fudge taste and not the sugary icing. If you try nothing else in this life, try this.

Ingredients:
2 cups sugar
2 cups flour
1 cup oil
1 cup water
4-6 tblsp cocoa
1/2 cup buttermilk
1tsp baking soda
2 eggs
1tblsp cinnamon
1 tsp vanilla


Pre-heat oven to 350. Mix 2 cups of sugar and 2 cups of flour and set aside. In a saucepan, mix oil, water and cocoa. Bring to a boil over low heat. Pour over the flour and sugar mixture. Mix well. Add buttermilk, baking soda, eggs, cinnamon, and vanilla. Mix well again.
Pour into 11x16 pan and bake for 30 minutes.
