Corn tortillas with Veggies

I had this isane craving tonight for vegetables. I didn't want to cook something that would take forever and I didn't want anything too heavy, but wanted something with a little crunch- you know sometimes you know what you want, know what you don't want but nothing sounds good?
I came up with this and it wasn't too shabby- if you just want something light.

I took 1 squash, 1 zuchinni, a little onion, and 1/2 red bell pepper. Saute in just a little bit of olive oil, salt and pepper to taste.




I then took corn tortillas drizzled with just a tiny bit more of olive oil and sprinkled with salt. I baked the tortillas at 400 until they became crispy (I got them a little TOO crispy so watch them) When they were done I put a tiny amount of mozzarella on them so my veggies wouldn't fall off.


Then I put the vegetable concoction on top with just a little bit more cheese and then voila.
 
 
 
Notice- just a little too crispy? But still good!
