Today was such a fun day. We were asked by Drew's First grade teacher from last year if Mike would play Santa and me help. Not real sure why she asked him, but of course we said "yes". We love doing things for kids. The kids spent the morning watching "The Polar Express" and were dressed in their pajamas with their teddy bears and blankets. We delivered Christmas bells to each student, received lots of hugs and smiles and heard them sing "Jingle Bells" and "Rudolph the Red Nosed Reindeer" to us. Some of the little kiddos seemed like they were in shock with their mouths wide open and one class in particular did not say one single word, it actually was a little awkard moment. We listened to the Christmas wishes and they asked for anything from cell phones to Barbies to chicken wings- yes, one child actually asked for chicken wings for Christmas! I laughed so hard when I heard him ask that.
All in all, it was so much fun to see the looks on their faces and the smiles that go from ear to ear.

This recipe for Sweet and Savory Coconut Rice is an old-school Our Best
Bites classic that is pretty much my go-to side dish with any summery,
tropical...
